Almond curls

almond curl cookiesI have a weakness for beautiful and graphic design packaging.

If it contains tea I’m totally a lost cause. So that’s how I got me a delicious vanilla-rooibos tea in a beautiful package asking for an equally beautiful cookie to come along. Almond curls just seem perfectly.
In my quest to prepare this classic recipe with as little sugar as possible, the following recipe was created. A delicious almond-ish almond curl.

What do you need: for about 30 almond curls

– 2 egg whites
– 30 gr. melted butter with 2 pinches of Himalayan salt
– 30 gr. almond flour
– 1.5 tablespoon maple syrup
– 10 g flour
– 15 grams of raw cane sugar
– 25 grams almond shavings

How to prepare:

Preheat the oven to 210 degrees. Beat the egg whites with a small pinch of salt to a slightly and frothy mixture. Add, when the egg whites begin to firm, the maple syrup. Beat for about 7-10 minutes.

Stir in gently with a spatula the flour, almond flour, cane sugar and then add the melted butter.

Grease a baking tray with butter, sprinkle lightly with flour and place little piles of dough onto, leave a space between the cookies.
Smooth the piles with the round side of a spoon. Sprinkle the almond shavings on it. Set for about 8 minutes in the oven.

nutty meatloafRemove the almond curls gently with a spatula from the baking tray. Put them on a number of bottles or rolling pins and let them cool.

They are best when eaten the same day.
